A few years ago, I tried making different gourmet mushroom "bacon" recipes. We had a taste test, and this recipe (with some serious modifications) was the winner. I want that smokey deliciousness, but I'm not smoking apple wood chips in my oven for a sandwich. I'm in cooking kindergarten. I just bought measuring spoons 4 years ago. So, here is a delicious, cheap, simple recipe with ingredients you can find easily. It's perfect for making a MLT (mushroom, lettuce and tomato) sandwich. You won't miss the meat.
Did you know mushrooms make vitamin D in the sunshine? Let them sunbathe outside or in a bright window sill for 30 minutes before cooking to increase their vitamin D.
Up to 16 oz Baby Bellas OR large Portabello mushrooms sliced
1 TB Brown Sugar
1 TB Soy Sauce
1 TB Black Strap Molasses
1/4- 1/2 tsp Garlic Powder
1/4 tsp Paprika
5-6 drops of Liquid Smoke
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
Place sliced mushrooms on the lined pan and bake for 15 minutes. Depending on the amount of mushrooms you may have to bake two or three pans worth. Collect all the baked mushrooms on a plate.
In a small bowl, mix the brown sugar, soy sauce, molasses, garlic, paprika and liquid smoke into a sauce. Now place handfuls of baked mushrooms into the sauce bowl to lightly coat them with the sauce. Place all the mushrooms back on the lined pan. Cook for another 10-15 minutes to caramelize.
For an MLT sandwich, serve mushrooms on toast with tomato, lettuce and vegan mayo. (We like Just Mayo from Walmart.)
